I'll keep that in mind. Always game to try something different. I met my Daughter and Grandkids at HH again. Ordered one of my favorites. Mega cheese and bacon omelet. Thing had at least a half pound of bacon in/on it.
I did a bit of cooking last weekend: 1) Beef stew - It's basically my slow cooker pot roast, but my wife likes smaller cuts of meat, so it's beef stew. For you kitchenware guys out there... this is a crockpot on steroids! It has a saute setting (up to 500 degrees) so you can brown meat and then dial it down to slow-cooker temps... everything done in one pot and in under 20 minutes of prep before walking away and letting it go all day on low. 2) Baklava - My wife had a craving for Baklava and the 2 or 3 times we tried it here in Charlotte, it let us down. This hit the spot! The recipe I used was a bit heavy on the nuts, but it was still better than almost any other Baklava I've had.
Today is Chicken Fried Steak day in Texas, as proclaimed by the Texas Legislature. Wow, they got something right, for a change. :wink: I had CFS from Norma's Cafe in Dallas for lunch, with mashed potatoes, green beans and fried okra. Meat and three. CD
Chicken wings (or wangs here in Texas). Marinaded 24 ours in EVOO, fresh basil and oregano from the garden, and lots-o-garlic. I cooked them sous vide until cooked through, and tossed them on the grill to crisp them up and give them some color. They were awesome. CD .
I always cook chikin wings in the oven, 350F, with season salt until they are almost cooked, them I dip them in a mix of 1/3 Franks Hot Sauce, 1/3 sweet chili sauce and 1/3 chili garlic sauce and put them in the oven again until the sauce is caramelized and I do it again and again, until the sauce is gone, usually three coats. It leaves a nice sticky spicy coating.
Dave, one of the best things about chicken wings is that they are a sponge for flavors -- and they are cheap. There are so many ways to make tasty wings. Your recipe sounds good. CD
1 1/4 pound T-bone, rare, with baked potato, and grilled asparagus. All courtesy of my lovely Daughter. Sorry, no picture though. Had my hands full between eating, feeding grapes to the pet deer, and watching the Grandkids carve pumpkins. I do however have pictures of the pumpkins.
It was cold and rainy yesterday. The rain stopped, but it was still cloudy and chilly today, so I made some chicken soup... or stew. Not sure what to call it. No recipe. I browned some chicken thighs in the CI dutch oven, then browned some onions and celery, followed by a bunch of finely chopped garlic. I put the browned thighs back into the DO, thigh bones included (lots of flavor in bones), and added chicken stock and diced red potatoes. I seasoned with S&P, and tied a few sprigs of fresh rosemary and thyme to slowly cook into the soup/stew. It was really good -- just perfect for the weather. The chicken thighs fell apart, making it more soup-like, but it was a very chunky soup. It sure hit the spot. I had two bowls of it. CD .
Chorizo? I am not sure they sell that in any store in Colorado. How was it? I do like SPAM fried. Don
I ended up going to breakfast with my Daughter. I'll try it this weekend and let you know. I ordered it from walmart.com EDIT: Diced the Spam and fried it along with diced potatoes and a diced onion. After everything was browned I added a few eggs and plated the mess up. Not pretty, that's for sure, but with the addition of the La Victoria Salsa Ranchera on top it was delicious. It has the color and smell of chorizo and I will be buying more. Grandson's a big fan too.
No afterburn to speak of, but did have a little bit of a front bite from the jalapeños in the salsa. The La Victoria Salsa Ranchera is my favorite all purpose salsa. It's got a good bite and goes good with everything. I know that WM has the Chorizo Spam on line, but we don't have it in stores around here. Every month or so I stock up on certain vittles that aren't available locally (like La Victoria products) and if I order $35 of stuff it's free two day shipping.
