So I have a clutch and LSD. I am wondering what would be a fair Labor only cost to have these installed ? I have one quote of basically $1200 for just the labor, that's me supplying all parts needed. I am in Florida and know prices will vary across the country, but does that price sound fair. ? is this a 8 hour job more or less for an experienced shop ?

Yep, it is a major job and 8 hours is a viable time estimate.

Yup. Sucks. Gotta drop the whole motor to change it.
