I've heard it's ATE's "street" fluid. Aka, longer change intervals but not great for the track.

Is that the wet or dry point? How far apart are they?
Some brake fluids seem to be more hydrophobic than others as well and that can have a serious effect on the life of the fluid. Are you doing anything more than DD'ing the car? AutoX or Track Days? -
I don't think you mean hydrophobic (movement away from water), which would extend the change interval, but contribute to oxidation.
ATE SL.6 has a shorter change interval, lower boiling points, and yes, lower viscosity in cold weather.

In relation to oil & gas terminology, hydroscopic is the correct term for absorbing moisture from the air.
