I don't know what the best is these days, but we used to use Sonic intercoms when we rallied back when the earth was cooling. They worked well, but back then I had good hearing, today not so much.

Most of us use the Chatterbox for instructing at HPDEs:
Chatterbox [CB50SKIT]
The CB50 is the cheapest configuration. Wired and no noise cancellation. -

Not all of my instructors for HPDEs have brought along intercoms, but most have. They seem to favor the Chatterbox unit and have, for the driver, an earpiece and mic unit that seems to fit nicely between the ear and the helmet and is held in place by the snugness of the helmet. It takes a bit of adjusting to get it right, but worked quite well.

Heck, I can hear my wife through my helmet when she's ridin' in the sidecar and we're goin' 60!

I've never had an instructor be easy to hear without amplification during HPDEs. And if you have your own system, you can custom fit it into your helmet. At MT3, it's hard to expect that the variety of instructors will each have a comm system.
