It could be your caliper guide pins are stuck and allowing the caliper to slide when the brakes are released.
Undo them, lube them and put them back.
Make sure you put your car in gear and do not put the parking brake on while removing the caliper because if you leave the parking brake on you will not be able to move the caliper.

Can also be that the parking brake cable for that side is rusted frozen.

Yea, those parking brake cables seize pretty regularly, often times you can give the cable a shove then a tug where the cables meets the caliper and it will free up.
