The GT40 was cool, but didn't feel like it would be great to drive (can't see anything, which is scary with 500+ hp).
I really liked the 911 GT3 RS and the Exige. I will own a 911 or Exige one day.
Driving my first 911 was a wonderful, wonderful day. Kinda like my first nipple encounter. -

Still a favorite car to sit in: My wife's Cadillac STS. It's one of the few cars that I've seen come out of Detroit that wasn't all cheap plastic. The 13 speaker Dolby 5.1 stereo w/ DVD player helps for 'sitting' enjoyment as well. Soft heated and cooled leather seats aren't bad either!

The nicest I've sat in, in terms of sight, smell, and touch is probably the Ferrari 599 GTB Fiorano..

I like the ergonomics, feel, and smell of the Ferrari F430 interior. There are times I prefer not to be the driver, and for those occasions the Rolls Royce Phantom is the only way to fly. It doesn't feel cheap like the Maybach [seriously]. If I had to be chauffeured in relative poverty, the Audi A8 would suffice.
Back in the world I could afford, I love sitting in my Elise for the sheer simplicity of it all. How many street cars are there where you are boxed in by the chassis extrusions?!
The Honda S2000 is probably my favorite "fits me like a glove" interior. I feel completely relaxed behind the wheel and the ergonomics are sublime. -
