I wish there was a breakfast delivery service in my area.
When we moved here in '99, KFC delivered, which I thought was odd. They no longer deliver, though. -

BEST EVER WAFFLES OR PANCAKES
1 3/4 cups flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tbsp. corn meal (optional)
2 eggs, separated
5 tbsp. sugar
1 cup buttermilk, plain yogurt or sour cream
1 cup milk
6 tbsp. melted butter or shortening
You can make this ahead of time and store it in a sealed container in the refrigerator so that it will be ready for breakfast each morning.
Whisk together flour, baking powder, baking soda and salt.
Whip egg whites, set aside. Beat egg yolks with sugar and stir in milk. Beat in flour mixture. Add melted butter or shortening.
When thoroughly combined, fold in beaten egg whites.
If batter is too thin, add a tablespoon of flour; if batter is too thick, add a tablespoon of extra milk, adjusting the batter until it has the consistency of very heavy cream. The batter may thicken upon standing and may require adjustment again.
Serve dotted with butter, drizzled with maple syrup or topped with a spoonful of marmalade or fruit.
Variation: Once batter is on the griddle, add fruit such as blueberries, strawberries or bananas. -

Ok...I'm going to share a secret...
As with most urban areas, there are several fast-food restaurants of any particular chain in the area.
There are two McDonalds in the area that I frequent on a regular basis. As soon as I walk-in, they know EXACTLY what I want, regardless of whether it's breakfast, lunch, dinner or late night.
Same thing holds true for Burger King, Wendy's, Arbys, Firehouse Subs, Tropical Smoothie Cafe, Dairy Queen, etc.
It does NOT matter if I walk-in or use the drive-thru; Schultze is forever-linked to me & my eating habits.
People don't believe me until they ride shotgun with me and when the auto-greeting at the drive-thru finishes, the person on the other end knows me by car and name & will say "Erika, do you want the usual?"
Sad...probably.

Pancakes are decidedly NOT junk food. Especially when you have them with loads of butter, real Vermont maple syrup & lots of bacon. :drool
Whomever told you that knows nothing about a balanced silverback diet. :frown2: -
The trick is to not over mix. If you leave the batter lumpy, the pancakes will be light and fluffy. WASH the bowl you mixed the batter in RIGHT AWAY. In twenty minutes it will set up like concrete.
