Girls weekend to do hot springs pool in Glenwood Springs, Colorado!
Besides a variety of wonderful local wine, amazingly good locally harvested deer salami, brie, grapes, macadamia nuts, blue cheese stuffed olives, assorted peppers, we hit the Brewery across the river for Fish and Chips!-

Hey, it's Fat Tuesday --Mardi Gras!
Might have to make some cajun tonight. Just so happens that I bought Gulf shrimps on sale at Kroger today. I wasn't even thinking about Fat Tuesday when I was shopping. Must be instinct.
No booze this time, but I'll survive.

I went big-time today, and made Korean bibimbap. Way too much work for one person to put together, even with good prep work. Trashed my kitchen, too.
But, it was good. Nonetheless, I think I'll be eating bibimbap at the local Korean restaurant from now on.

I made Peposo last night, a centuries old Italian peasant dish. It is short ribs, rubbed with garlic paste, and heavily covered with fresh cracked pepper. You braise it for about three hours in red wine. You can serve it over the starch of your choosing, I went with penne pasta.

It is Restaurant Week here in Charlotte, so my wife and I mad a semi-annual pilgrimage to The Capital Grill. A nice Cabernet. Blue cheese wedge salad with huge chunks of bacon, a 14oz NY strip (house dry aged) with mashed potatoes and green beans sautéed with tomatoes. Flourlesss chocolate cake w/ fresh raspberries and a fresh cup of coffee. Mmmmmmm.

Looks really good. Thats my favorite way to cook and eat fresh veggies.
I balanced out my no-meat burger by eating an all beef hot-dog last night -- NYC style. Kosher dog, yellow mustard, and sauerkraut. Lays potato chips on the side, with a cream soda to wash it down.

Prepping for Super Bowl tomorrow, doing a "French Lasagna". It's day old croissants, sliced and layered with ham and gruyere, herbed boursin, then soaked in a custard of heavy cream, yolks, roasted garlic, S+P then baked off, finished with green onions. Kind of a savoury bread pudding that does well for breakfast, lunch or dinner.

Birdseye makes some really good steamer bags too. Some nights I can just do a bag of the rotini and steamed veggies for dinner and that's fine by me.
Here is the thing I was talking about abovea
