    I had two all-beef patties, special sauce, lettuce, cheese, pickles, onions on a sesame seed bun. And, a side of fries.

    It has been years since I last made a Big Mac at home. It was a jumbo Big Mac. I couldn't eat it all, but Psycho-Poodle was willing to help me out.

    I made my first lasagna tonight. I didn't follow a recipe, per se. I read a few recipes, got the general idea, and came up with my own single-serving size lasagna. It was very good -- and VERY filling. I'm stuffed.

    I have been known to partake of the delicacies of Le House du Waffles. I get the triple-scramble, with hash browns (scattered), and a side of bacon. White toast, please... and coffee.


    But, last night, I went all healthy and grilled some beef and fresh veggies on some metal spikes. My taste-buds were quite happy, and my arteries breathed a sigh of relief.

    My next door neighbor had BBQ chicken going on his grill one night last week. There is something about the smell of BBQ chicken that immediately transports me back to my grandparents yard when I was 10 years old. My wife is one of those folks who would be vegetarian if she didn't like the taste of meat so much... she generally will do boneless breast, but very rarely will she ever eat chicken from the bone. BBQ chicken isn't the same when it is just a boneless lump, so I did whole pieces. Dinner last night: BBQ Chicken, baked beans, grilled corn on the cob, coleslaw, white bread and butter. YUM!

    My problem isn't blood sugar, it is a liver that has seen to much action.

    I'm 5'11" and 165 pounds, so I can eat what I want, but have to be careful what I wash it down with.

    Tonight, it was US wild caught shrimp and scallops, red and orange bell peppers, Texas 1015 sweet onions, garlic and shrooms cooked a scorching hot cast-iron wok on the Weber Kettle. And... non-alcohol beer. St. Pauli Girl non-alcohol beer, so not bad -- just pricey.

    I have been so busy, I haven't had much time to cook, and when I had time to cook, I didn't have time to write about it, and didn't want to touch my camera off the clock during three months of taking pictures for Monterey car week auctions.

    So, I was looking at food videos on YouTube, and saw a Binging with Babish video on something called the "Garbage Plate." It is a Rochester, NY invention, and classic.

    I decided to make one. Fried potatoes and macaroni salad on the bottom. A couple of hot links, split and seared on cast iron, and this meat "gravy" that has about six spices in it.

    It was pretty good, but not great. I had to modify the "gravy," because the flavor was just not working for me. I added more heat to it.

    It was also a day's worth of food on a paper plate (the paper plate is mandatory, as I understand it).

    Definitely worth doing. But, probably won't do again.

    I nailed the fries!

    I always use frozen OreIda fries. I double fry them. I par cook them at 325 degrees, and let them cool, then finish them at 375 degrees. It gives you a very crisp crust, while the inside is nice and fluffy. That method works better with frozen potatoes.

    For my garbage plate, I did use store-bought mac-salad, that I "modified" to suit my taste buds. I didn't want to make a big batch of mac-salad for one meal. I was able to buy a small container of it.

    The "gravy" was made from scratch, and I modified the recipe for that, too.

    I went rogue tonight, and cooked without a net. No recipe, just tossed together stuff I had in the house.

    I sautéed some peppers from my garden, and some garlic in a mix of olive oil and butter. I added some shrimps, and casarecce pasta, which I had never heard of, but got it for a good price at COSTCO. At the end, I added fresh basil and oregano from my garden.

    Wow! I actually hit a home run tonight. I loved it. I wish I could do that every time.

    I bought two 12 lb turkeys to feed twelve family members for thanksgiving. I'll butterfly them and cook them on two racks in the oven.

    My wife is a foodie, I benefit the most. She has everything she needs including a full professional set of Calphhalon non stick pots and pans. She is like me with car detailing stuff, she has the best but always wants to test the other stuff.

    Most times she gives away “used one time” stuff that does not pass her testing.

    It is a great job being her food tester. Hahahahaha

    Great looking ribeye CD. It's been too cold to assemble my new Weber grill I got for Christmas, but I did find time to try out a new Instant Pot. This dish normally takes me at least three to four hours to prepare, but with the new gadget ~1 hour.
    Pork Curry, w/potatoes/onions/carrots. Served over rice of course.

    VV, a lot of people on the cooking forum I frequent have Instant Pots. I'm not sold, yet, plus don't have room for anymore kitchen toys.

    I haven't taken many food pictures lately. I made some cider/sauerkraut braised pork butt with garlic mashed taters for New Years Day. That was good...

    And, tonight I sautéed some big-ole shrimp (real Texas term) in EVOO, butter and lots-o-garlic, tossed it with some pasta, and finished with pepper, parsley and ParmReg grated cheese...

    Chili cheese fries, again. This time made with steak fries, cheddar cheese curds, red jalapeño salsa and the usual Wolf Brand Hot Chili w/out beans. I add a shot of "Dave's Insanity" hot sauce to the chili for a little extra kick. Best version yet.
