    Saturday and Sunday morning the Little Black Dog and I cook SPAM and Cheese Omelet sandwiches. He has cut back a little on the SPAM since his colestrol was a little high. My significant other is ok with me eating SPAM since I am well insured:yikes:

    Well now, as a little snack, I played a little jalapeño roulette. It is like Russian roulette, with peppers.

    I made some cream cheese stuffed, bacon wrapped jalapeños, and they were really good -- until I ate that one rogue pepper. There is always that one that wants to kill you, which is why I call it jalapeño roulette.

    Hot peppers will make your nose run. This one made my nose bleed. I'm not making that up. I don't know how it made my nose bleed, but it did. It didn't last -- it stopped bleeding in about 20 seconds.

    Good news is my sinuses are crystal clear.

    I like the Atomic Buffalo Turds. I fix them the same way as CD's jalapeños, but I plug the hole in the top with a Little Smokey. Cook 'em low and slow. I use a stainless rack that I had made that holds 30 peppers upright so you don't lose the cheese.

    Couple of 1/2 pound Omaha Steakburgers. Medium rare with a slice of Vidalia and what passes for a fresh tomato this time of year on an onion roll. And yes, I finished both of them and they were GOOD! :D

    Pulled pork BBQ, Mac 'n Cheese, green beans, jalapeno cheddar corn bread and a slice of apple pie. Stuffed to the gills.

    Love me some pulled pork. My guys just catered Ward Burton's American Hero's event this past weekend. Pulled pork w all the fixin's.

    This is my pork cookin' machine. Or rather, was, I just sold all my cooking gear to my cooking buddy to help pay for some of the mods on my Mini. Getting too old to be standing around a hot cooker for 12-18 hours at a stretch anyway.

    Stopped at a little place in Chapel Hill for lunch to reward myself for successful completion of MOHS Surgery at UNC Med.
    If you're ever in Chapel Hill check out Merritt's. They're known for their BLT sandwich. I ordered a double which the menu described as "sourdough toast, mayo, salt & pepper, bacon bacon bacon bacon, lettuce, tomato, bacon bacon bacon bacon, lettuce, tomato, mayo, toast. I switched it up and changed the lettuce for cheese. Really good sandwich. Doesn't look bad considering this is after a 2 hour drive home.
    Oh yeah...... If you're up to it, they also have a triple!

    Nah. All that pork counteracts the 1/2 pound burgers. Scientific fact! :devil:
    Heck, I quit smoking and quit drinking, but I gotta keep some bad habits. :D

    For your BBQ'n weekend....

    Pulled Pork Potato Skins...
    Bake your potatoes
    Cut in half and scoop out "some" of the center
    Fill with lightly sauced Pulled Pork
    Top with the shredded cheese of your choice and bacon pieces
    Back in the oven to melt it all down
    Top with more BBQ sauce and any other fixin's of your choice.

    NY Strip, Bourbon Brown Sugar & Ginger Redux, White Cheddar Cauliflower Mash, Peas, Thyme.

    Lots of similar ingredients to past posts because was cleaning out inventory. Time for summer stuff.

    127.5 degree NY Strip sous vide reverse seared, blanched peas, simmered cauliflower, butter, cheddar, whole milk blended smooth, redux of bourbon, ginger, ketchup, brown sugar, cider vin and chili flake.
