I made my own corn beef for St.Paddy's day. The hard pat was finding the Instacure #2 to add to the brine. I let soak for a week and a half, it came out great!

    To make it:

    I wish I had taken a picture.....

The company was bought some of the best damn BBQ from a local joint today for lunch.
My plate was full of some amazing ribs, a couple pulled pork sliders, fried chicken, baked beans and some pretty damn good mac n'cheese casserole with just the right amount of browning on the top.

Now I'm full and can hardly move

    How about a great breakfast???

One excellent quality English Muffin (I find "BAY'S" or "Publix") the best.

    One XL Egglands best egg

One slice of Kraft American cheese

Six strips of bacon (I used the "Hormel) pre-cooked bacon.

I have a very small just the right size cooking pot that is a perfect size to cook this in. Same circumference as the English Muffin.

This along with a nice hot cup of coffee and a chilled 12 ounce can of V8 juice makes a great fast easy to make breakfast.

    Yum---Yum
