    I actually snapped a picture of this one. I made a batch of beef and Guinness stew last night. It was the first time I made it. As usual, I didn't measure anything, but it had beef chuck, onions, celery, garlic, Guinness and beef stock in it. I added potatoes halfway through the two hour cook in a cast-iron dutch oven. It should probably have carrots in it, but I don't like carrots.

    It was yummy. Leftovers tonight... and probably for the next few nights.

    There's a better hot springs in CO... (But expect a lot of nudity, and some things can't simply be unseen...) check out Orvis Hot Springs just outside of Ridgeway / Ouray... Lots of good off roading trails in the area and about 60 miles from Telluride. Spent lots of time there, mostly after hours when a buddy of mine decided to run off get married and move there.

    HNY M/A peeps...

    I'm having my parents over for my traditional New Year's meal today.....

    I have a big pot of kraut on the stove with 4 smoked pork chops and 2 racks of smoked baby back ribs marinating with a full bottle of riesling wine..... You know... Because the pork chops and ribs get a little thirsty sitting in the bed of kraut.... A little while later I'll whip up a batch of creamy mashed potatoes closer to when my parents arrive....

    I'll also be cooking up a batch of black eyed peas and salt pork as a side... I have a case of Stella Artois beer chilling in the refrigerator.... Gotta have beer with the kraut...:beer

    When they arrive we'll have a little "happy hour" and I'll mix up a batch of Moscow Mules to get the show rolling...

    Hope everyone on M/A has a great 2016.... :D

    Chuck I have to say when you retire from bending metal into art you should convert to an eatery. I think you'd be very good at it. Babs & I will be there as loyal customers. :D

    So this is special....
    My daughter and her BF just showed up unannounced..... We didn't want to pressure them to join us because younguns always want to do their own thing and hanging with the old ones isn't always on the top of their list.... The BF is a meat guy... My daughter is a vegetarian.... Sooooo.... I'm quickly baking her one of my veggie specials that she likes...

    Acorn squash, split in half.... 1 TB spoon of butter in the cored out center, 1TB spoon brown sugar, 1/4 teaspoon nutmeg, a little salt, bake @450F for 1 hour.... 20 minutes before done sprinkle edges of acorn squash with raw cane sugar to caramelize the rim.... Tasty :D

    I make that acorn squash dish a lot. It goes real well with pork chops!:drool

    I agree....
    I used to add some smoked bacon to the center..... Yeah... Bacon goes good with everything.... Except vegetarians.... And.... I will not substitute with tofu bacon...:cryin:

    Just left my Daughters house. I made a big pot of collard greens with fatback and she grilled a pork tenderloin. We also had some purple hull peas that were grown in their garden. They were cooked with a couple slices of fresh smoked country bacon. Finished it off with a plate piled high with fried cornbread.
