I'm still on a high-iron diet, so I made a small pot-o-chili yesterday with 2/3 beef and 1/3 calf liver cut into small cubes. The liver was detectible, but the chili cooked low and slow for a few hours, so the liver had good flavor infused into it. I'm thinking about pouring the leftover chili on a baked spud for supper tomorrow. CD

It does look like curry, doesn't it? It's a sauce made out of what I affectionately call the "head guts" of the crab. Pull off the carapace, scrape out all that gooey stuff, add some water and soy sauce, simmer. Then add a couple of eggs and scramble into the mixture. The result is a yummy, thick sauce that's delicious over rice. :ihih:

Hey, it's Fat Tuesday --Mardi Gras! Might have to make some cajun tonight. Just so happens that I bought Gulf shrimps on sale at Kroger today. I wasn't even thinking about Fat Tuesday when I was shopping. Must be instinct. No booze this time, but I'll survive. CD
