Recipes Watermelon Salad (odd, but delicious)

    Here's a weird one I had yesterday. The ingredients don't look like they should belong together. Actually, it looks like something an 8 year old might throw together, knowing nothing about cooking. Nonetheless it is totally delicious.

    Ingredients

    1 1/2 quarts seeded, cubed watermelon
    3/4 cup halved, thinly sliced red onion
    1 tablespoon fresh lime juice
    3/4 cup crumbled feta cheese
    1/2 cup pitted, sliced red olives
    1/2 cup chopped fresh mint
    2 tablespoons olive oil

    BTW, what is a red olive? I'll have to look that up.

    Kalamata olives I think. They're tastier than the black ones, but not as acidic as the green ones

    :cornut: The minute that I slice a Watermelon at my house, it's gone in no time at all. Certainly gone before a dish can be made out of it. The family's on the back porch in bare feet, fried chicken down the hatch, then if you're able to defend your self, you'll get 1/4 of the watermelon:drool. The South, aint life great! :Thumbsup:
