Send the injectors to Jan and have his guy clean, flow test, and put new O rings on them. It does not cost that much. Also it will make a difference.
A header on your car will be fine with your exhaust but will not really be a power gain until you add the RMW big valve head and have Jan retune your car.-

My engine now has 11,700 original miles. I am not going to do any mods to the inside of the engine, hopefully for a loooog time. The mods I have planned are all to get this car to run as efficiently as possible. The car will be used mostly for 'touring' the country and, of course...The Dragon.

No need to rebuild the injectors as the spray has no effect on performance. They simply put gas into the manifold........unless you mean to make sure they are all supplying the same amount of fuel.
I wouldn't go with a header until you can get the whole exhaust done......and get it retuned for it. -
